Saggutti
Prawn Briyani is my all time favorite briyani. Any time you come late from office and want to cook something delicious and fast, then go for prawn briyani. One can also replace prawns with egg in this briyani. Prawns give a kind of flavor to this one.
Ingredients required :
Prawns : 1/4 kg ( clean the prawns, remove the black thread from its stomach)
Cut the cleaned prawns if big and marinate with salt for 1/2 hour.
Basmati Rice 2 cups
Wash the rice and keep aside for 1/2 hour.
Coriander seeds 11/2 Tsp
Fennel seeds 1 Tsp (Saunf)
Cummin seeds 1/2Tsp (Jeera)
Black Cummin seeds 1/4Tsp (Saijeera)
Dry chillies 6 -7
Pepper seeds 8 -10 (Meeri)
Cloves 8 -10 (Lavang)
Garlic cloves 8 flakes
Onion 1 small in size (To be fried directly keeping on the burner, this gives aroma)
Roast all the above ingredients expect fried onion with a tbsp of vanaspati/ dalda till they turn to reddish brown.
Grind all the above roasted ingredient together with fried onion in to smooth paste with 2 tbsp of water.
Onion 2 big chopped finely
Green Chillies 3 Slitted
Bay leaves 2
Step 1: In a pressure cooker, put around 2 tbsp oil/ vanaspati. Add chopped onions and green chilies.Fry till the onions turns its color to brown. Now add prawns fry for a minute ( prawns changes to reddish and crawls itself)
Step 2: Add rice and fry for 2 minutes. Now add 4 cups of water.Adjust for salt, add bay leaves. Add above grounded paste. Take 3-4 whistle.
Lastly while serving add a tbsp full of salted butter, Mix well and garnish with coriander leaves

Biryani looks lovely n different....would like to make it....just wanted to know when to add the ground paste? .....
